Moi Moi
Another one pot dish which is delicious and a double win is that it is really good for those with diabetes. For vegetarians the eggs will be enough for protein but in Nigeria they might also add crayfish or meat
It has a longish preparation time in terms of prepping the ingredients and soaking the beans so a lot can be done in advance.

Ingredients

250g Black-eyed beans or brown beanssoaked in water, then skins washed off and soaked so that they are soft and clean (do this overnight)

1 large red pepper roughly chopped

4 medium onions peeled and roughly chopped

1tsp

1 small spring onion chopped

3 cloves garlic
-
6 eggs – 2 raw and 4 hard-boiled

1 cup vegetable oil
-
100ml water
-
1tsp salt
Method
1. Use the same blender as the Jollof rice – add the beans (which are now pale and white), the chopped red pepper and onions, the water and vegetable oil. Blend until smooth.
2. Add the 2 raw eggs and season with salt to taste and blend again to make it light and fluffy.
Akara aside
This mixture can be deep fried as is and it is called Akara. To do this, add less water so the mixture is a little thicker and heat vegetable oil and gently add 1 tbsp of the mixture at a time to very hot oil Cook until golden brown and drain on kitchen paper.
Back to Moi Moi
3. The moi moi needs to be steamed in the oven so boil a kettle of water, pour it into the baking tin and steam. Heat the oven to 190C Fan.
4. Pour the moi moi mixture into a muffin tray or the individual metal tins and add a quarter of hard boiled egg to the top of each (or prawns or meat for the meat-eaters.
5. Stand the muffin tray in the boiling water in the baking tray. Cover with foil and put in the oven to cook for an hour.​
Suggested Wine Pairing
A Chenin Blanc or a Sauvignon Sémillon marries high acidity, stone fruit, and tropical fruit flavours that are fabulous with a meal of Moi-Moi. The deep fried Akara calls for bubbles, why not a Crémant de Bordeaux?
