Vegetable Spring Rolls

Who doesn’t love the freshness of crunchy veggie spring rolls? The French are no exception. In this

version, we add an Asian twist — pairing the rolls with three dipping sauces. These versatile bites

pair beautifully with wine, whether it’s a fruity Bordeaux red, a crisp white or a refreshing rosé.

Ingredients

For the rolls

• 1 ripe avocado, sliced

• 1 yellow capsicum, sliced

• 1 red capsicum, sliced

• 50g mixed salad leaves

• 8 sprigs of fresh coriander (optional)

• 60g garlic and herb spreadable cheese (such as boursin)

• 4 rice paper sheets

For the Creamy Sweet Chili Sauce

• Store-bought (or home made) sweet chili sauce (e.g. Ayam brand)

• Sour cream

Mix equal parts to taste

For the Mayo Yuzu Kosho Pepper Sauce

• 2 tbsp mayonnaise

• 1 tbsp unsweetened yoghurt

• 2 tsp Yuzu kosho (Japanese citrus chili paste)

For the Sweet and Spicy Korean Sauce

• 2 tbsp peanut butter

• 2 tsp Korean gochujang chili paste

• 1-2 tbsp water (adjust for consistency)

Method

1. Fill a large baking dish or pie plate with water. Soak one rice paper sheet at a time for about a  minute. Once softened, transfer to a plate and let rest for another 2–3 minutes to make it easier to handle (it will be too slippery to roll right away).

2. Place a small handful of salad leaves, a few coriander leaves (if using), and two to three spoonfuls of garlic cheese onto the rice paper. Add avocado slices and strips of red and yellow capsicum and whatever fresh veggies you are using, just below the center.

3. Starting from the edge closest to you, roll tightly while folding in the sides — similar to rolling sushi. Repeat with the remaining ingredients to make 4 rolls.

4. Slice each roll into three pieces and arrange them on a serving plate

For the  Dipping Sauces

Mix all ingredients for each sauce in a small bowl until smooth. Serve alongside the spring rolls.

Suggested Wine Pairing

These are delicious  with a crisp dry white, although the sauces make a difference. The Sweet and Spicy Korean Sauce goes brilliantly with a  lighter red because  of the peanuts and spice.
